Why visit in the evening?

It fits around the pyramids. The Giza plateau is open 08:00–16:00 (Ministry of Tourism and Antiquities), so on a late-opening day you can do the pyramids in the cooler morning and the museum in the afternoon and evening, without rushing either.

Which night tours are worth booking?

Two very different evenings. The budget option is an evening visit with entry fees, a licensed guide, hotel pickup and a street-food dinner. The premium option adds the museum show and an Egyptologist, with dinner if you choose it. Both are in the Book this visit section at the top of this page, sorted by price.
